Ingredients for 8 persons

• 200g flour
  
• 160g butter or 4 table spoons olive oil
  
• 100g parmigiano (cheese)
• 40g Nyons’ stoned black olives
  
• 4 teaspoons of mixed herbs (parsley, thyme, rosemary, chive…)
• 2 eggs
• 2 pinches of PDO Espelette chilli
• 4 pinches of salt
• ½ teaspoon of baking powder.

Preparation (15 minutes)

Preheat your oven to 170°C (th.5/6).

- Mix flour, baking powder, salt, mixed herbs, chilli and cheese.
- Add butter/olive oil and eggs and knead the mixture with your fingers in order to make it homogeneous.
- And finally add minced olives.
- Put little balls of the mixture upon a baking sheet covered by a greaseproof paper. Then, flatten the balls to give them a cookie shape.
- Bake them in the oven for 20 minutes. You may serve them with green salads.
